Ингредиенты
- 1 lb Raw Yellow Fin tuna
- 1 lb Bay scallops
- 2 lb Orange Roughy
- 2 med Jalapeno chile pepper, seeded & fin minced
- 2 med Serrano pepper, seeded & fin minced
- 1 x Red, green, and yellow bell peppers, seeded & finely minced
- 1 pkt Sun Dry tomatoes, thinly sliced
- 5 x Cloves garlic, crushed & fin minced (use 2 different types of garlic)
- 5 sprg each cilantro and parsley, finely minced
- 2 Tbsp. Fresh grnd black pepper
- 1 Tbsp. Sea salt
- 1/2 c. Good extra virgin olive oil Juice of 15 to 20 limes

- Thinly slice tuna and Orange Roughy and put in a clean ceramic crock. Add in all of the other ingredients and mix well. Cover fish with lime juice.
- Cover crock with cheese cloth and chill for 24 hrs. Serve with cool Irish beer and Italian bread.
