- 2 teaspoon baking soda

- 1 c. nuts
- 3 ounce cream cheese
- 1 c. powdered sugar
- 2 T shortening
- 1/4 teaspoon almond extract

- Put together ingredients with an electric mixer, adding large eggs, one at a time, and carrots and nuts last. Pour into a greased and lightly floured pan. Bake at 325 degrees for 1 hour.
- Blend ingredients. Cake may be frosted while warm. This is sufficient frosting for a very thin layer that seems to be all the cake needs.
