- 1 pkg. carrot cake mix
- 3 large eggs
- 1 c. raisins
- 2/3 c. oil
- 1 c. minced nuts
- 1 (8 ounce) cream cheese
- 1 stick butter
- 1 box powdered sugar
- 1 teaspoon vanilla

- Put together dry cake mix, large eggs and oil in large bowl. Stir in nuts and raisins. Spread evenly in 9 x 13 inch pan. Bake at 350 degrees for 25 to 30 min. Cool and frost.CREAM CHEESE FROSTING: Beat softened cream cheese and butter till well mixed. Add in powdered sugar and vanilla. Beat well. Can also add in additional nuts if you like.
