- 2 c. brown sugar
- 3 x eggy yokes
- 3 tsp lowfat milk
- 2 tsp butter
- 1 c. raisins or possibly more if you like
- 1 c. minced nut meats
- 1/2 c. coconut
- 1 tsp vanilla

- Mix the sugar, butter, egg yokes and lowfat milk well add in fruit and nuts, drop in pastry lined tart tins
- makes about 18 tarts
- bake at 350 for 10 minutes or possibly till crust turns brown
