- 1 1/3 c. water
- 1/2 c. brown rice
- 1/8 tsp salt
- 1 tsp extra virgin olive oil
- 1/2 c. finely minced red pepper
- 1/2 c. minced green onion
- 1 x clove garlic chopped
- 1 tsp chili pwdr
- 1/4 tsp grnd cumin
- 7 ounce no-salt added whole kernel corn liquid removed
- 1 Tbsp. canned minced green chiles

- In a medium saucepan, bring water, rice and salt to a boil over high heat.
- Cover and reduce heat to low. Simmer till water is absorbed and rice is tender, about 30 min.
- In a large skillet, heat oil over medium heat. Add in pepper;cold, stirring, for 2 min. Add in green onions, garlic, chili pwdr, and cumin. Cook,. stirring, for 30 seconds. Add in corn and chilies; cook till heated through, about 2 min. Stir in rice. Remove from heat. Carefully press some warm rice mix firmly into a 1/2cup measure. Unmold timbale onto serving plate. Repeat with remaining mix. Serve immediately.
