- 4 ounce. skinned, boneless chicken breast
- 1 ounce. Italian dressing (low calorie)
- 2 tomatoes, sliced 1/4" thick
- 1 tbsp. Italian bread crumbs
- 1/2 teaspoon minced basil
- 1 teaspoon Parmesan cheese
- 1/2 c. cooked angel hair pasta
- 1/4 c. frzn green peas
- 1/2 teaspoon extra virgin olive oil

- Preheat oven to 400 degrees. Marinate chicken in Italian dressing for 2 hrs. Place chicken breast on baking pan and top with Italian dressing. Cook approximately 10 min, then top with tomato slices, bread crumbs, basil and Parmesan cheese. Continue to bake till bread crumbs are browned and chicken is done.
- While chicken is baking, quickly saute/fry angel hair pasta and green peas in extra virgin olive oil over brisk heat. Serve cooked chicken over heated pasta. Serves 1. Cooking time 30 min.
