- 4 ounce dry macaroni
- 1/2 stk butter
- 1/4 c. flour
- 1/4 tsp dry mustard
- 1 tsp salt
- 1 dsh freshly-grnd black pepper
- 2 c. lowfat milk
- 1 Tbsp. chopped onion
- 1 c. processed American cheese - (1/4 lb)

- Cook pasta according to instructions, drain and set aside.
- To make cheese sauce, heat butter in a saucepan add in onion and flour. Allow this to thicken, and when thickened slowly add in the lowfat milk.
- When all lowfat milk is added, you may add in the cheese. For this Velveeta, is really the best, but you can use another brand. Add in salt, pepper, and dry mustard. When sauce has thickened, add in pasta.
- Lightly butter a casserole dish, and add in pasta mix to casserole dish. Bake at 400 degrees for 20 min.
