- 3/4 c. rice
- 1 quart. water (4 c.)
- 1/4 teaspoon salt
- 1 quart. & 2 c. lowfat milk
- 1 c. sugar
- 3 Large eggs
- 1 teaspoon vanilla

- Boil together rice, water and salt. Boil till water is just about absorbed and rice is fluffy. Add in 1 qt and 1 c. (5 c.) lowfat milk and sugar. Let boil till it thickens. Beat Large eggs and add in 1 c. lowfat milk and vanilla. Fold the egg mix into the rice. Chill.
