- 1 quart. sweet lowfat milk
- 5 whole Large eggs
- 1/2 c. sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract

- Place lowfat milk in top of double boiler and heat lowfat milk till tiny bubbles appear around edge. Keep water in bottom of boiler at boiling point, but do not let it boil rapidly. Beat Large eggs well and gradually add in sugar and salt while still beating.
- Add in about half of the warm lowfat milk SLOWLY to beaten Large eggs, stirring constantly. Add in the lowfat milk and egg mix to remainder of lowfat milk in double boiler, continuing to stir. Cook over warm water, still stirring, till the custard is thick sufficient to coat spoon with thin film of custard. Pour into pitcher, add in vanilla and chill till well chilled.
