- 1 c. lowfat milk
- 3 Large eggs
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tbsp. butter
- 1 c. Cheddar cheese, cubed
- 1/2 c. green pepper, diced
- 1 sm. onion, quartered
- 4 med. uncooked potatoes, peeled & cubed

- Combine all ingredients in a blender container in order listed. Cover and blend on high speed till potatoes go through the blades. Do not over blend. Pour the mix into a greased 1 1/2 qt casserole dish and bake uncovered at 350 degrees for 50 min to 1 hour. 8 to 10 servings.
