- 1 can black beans, rinsed and liquid removed
- 1/2 bn green onions, minced
- 1 med bell pepper, diced
- 2 med tomatoes, diced (pulp removed)
- 1 x clove garlic, crushed (or possibly garlic pwdr) Balsamic vinegar (about 1/4 c., or possibly to taste) Extra virgin olive oil (about 1 Tbsp. or possibly to taste)
- 6 x -12 leaves fresh basil (depending on size), minced
- 1 loaf crusty bread (baguette, etc.)

- Combine all ingredients except bread and season with salt and pepper. Adjust vinegar and oil to taste. Refrigeratefor 2 to 24 hrs. (Salad will get juicer as it sits.) Toss and serve with torn (or possibly cubed) bite-sized pcs of crusty bread to sprinkle over each serving & soak up juices.
