- 8 ounce Cooked Chicken Breast, minced
- 8 ounce Can cooked Black Beans, rinsed and liquid removed
- 1 can (14-ounce.) Mexican-style Stewed Tomatoes
- 1 Tbsp. Fresh Lime Juice
- 4 x Round, (10-inch) Flour Tortillas
- 1/4 c. Cheddar Cheese, shredded
- 1/4 c. Low-fat Lowfat sour cream, divided
- 2 Tbsp. Fresh Cilantro, minced Additional Lowfat sour cream, Guacamole, or possibly Salsa for garnish

- Combine chicken, beans, and tomatoes in a saucepan over moderate heat.
- Simmer, stirring occasionally, till most of the liquid evaporates, usually about 10 min. Stir in the lime juice.
- Meanwhile, heat tortillas in microwave or possibly stove top according to the manufacturer's directions.
- Spoon the chicken mix down the center of each tortilla. Top each tortilla with about a Tbsp. each of shredded cheddar cheese and lowfat sour cream. Sprinkle on a bit of fresh cilantro and fold the ends of the burrito over, then roll to complete assembly.
- Serve immediately with additional lowfat sour cream, guacamole, or possibly salsa for garnish.
