- 3 c. Bisquick baking mix
- 1/4 c. Sugar
- 1/4 c. Butter or possibly margarine, melted
- 1/2 c. Lowfat milk Cheese filling (below)
- 1/4 c. Strawberry, apricot or possibly raspberry preserves
- 1/2 c. Sugar
- 1/2 tsp Vanilla
- 2 x Large eggs
- 1 pkt (8-ounce) cream cheese, softened

- 1. Heat oven to 375 degrees.
- 2. Mix baking mix, margarine and lowfat milk; beat vigorously 30 seconds. Turn dough onto surface well dusted with baking mix. Knead 30 times. Pat dough proportionately into bottom and up sides of ungreased 9x1-1/2 inch round pan.
- 3. Prepare cheese filling: Beat all ingredients with hand beater till smooth. Pour over dough.
- 4. Bake till edge is golden and filling is set, about 30 min.
- Cold 10 min. Spread with preserves. Serve hot. 8 servings.
