- 3 c. bran (All Bran, 100% Bran) cereal
- 1/2 c. vegetable oil
- 1 c. raisins (I sometimes use more)
- 1 c. boiling water
- 2 Large eggs, lightly beaten
- 2 c. buttermilk
- 1/4 c. molasses
- 2 1/4 c. whole wheat flour
- 4 teaspoon brown sugar
- 2 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tbsp. wheat germ
- 3 bananas
- 2 c. granola (100% all natural cereal)
- 1 c. minced dry apricots (optional)
- 1 c. walnuts, coarsely cut (optional)

- In a large bowl, combine cereal, oil, raisins, and pour boiling water over mix. Allow to cold slightly.
- In a small bowl, combine Large eggs, buttermilk and molasses. Add in to mix.
- In another small bowl, combine flour, sugar, soda and salt. Add in to cereal mix, stirring just sufficient to moisten dry ingredients.
- Smush bananas (I think this is called puree). Add in bananas and the rest of ingredients to the batter, stirring just sufficient to mix well. Cover the batter with plastic wrap or possibly damp towel, and let stand at least 15 min, preferably 1 hour.
- Preheat oven to 400 degrees. Grease 24 muffin c. and fill about 3/4 full. Bake 20-25 min. Check after about 18 min. Remove from oven and allow to cold before removing from pan. Cold on rack.
