- 2 lb Lean grnd beef
- 2 c. Minced onions
- 3 Tbsp. Grnd cumin
- 3 Tbsp. Chili pwdr
- 1 1/2 Tbsp. Garlic pwdr
- 1 Tbsp. Minced canned Chipotle chilies in adobo sauce
- 2 1/2 c. (or possibly more) water
- 1 c. Finely minced fresh cilantro Grated Cheddar cheese Lowfat sour cream Additional minced onion

- Canned chipotle chilies are available at Latin American markets, specialty foods stores and some supermarkets.
- Saute/fry beef and 2 c. minced onions in large Dutch oven over high heat till beef is cooked through, stirring often and breaking up beef with back of spoon, about 10 min. Add in cumin, chili pwdr, garlic pwdr and chipotle chilies; saute/fry 3 min. Fold in 2 1/2 c. water and 1/2 c. cilantro. Reduce heat to medium-low. Cover partially and cook 1 1/2 hrs, adding more water by 1/4 cupfuls if chili becomes dry. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill. Bring to simmer before continuing.)
- Mix remaining 1/2 c. cilantro into chili. Ladle chili into bowls. Serve, passing cheese, lowfat sour cream and additional minced onion separately. 4 Servings
