Рецепт Beef and Veggies Casserole Pinoy Style (Mechado)

Ингредиенты
- 1 kilo Beef with fat, cut into chunk
- 1 cup tomato sauce or 1/2 cup tomato paste
- 1 onion, chopped
- 5 cloves garlic, minced
- 2pcs bay leaves
- 4 med potatoes, quartered
- 1 med carrot, cut into cubes
- 1/2 cup green peas
- 2 tbsp cane vinegar
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cups beef stock (or beef cubes dissolved in water)
- 1/4 cup soy sauce
- salt and pepper to taste
- Canola oil
- Cornstarch (optional)
Инструкции
- In a pot, heat oil and saute garlic and onions.
- Add beef and stir fry until well blended.
- Add soy sauce, bay leaves and beef stock then simmer under medium heat until tender. Add water if necessary. (for quicker process use a pressure cooker to tender the meat, i prefer slow cooking)
- Add vinegar and boil again for 2-3 minutes. Do not stir.
- Add carrots, potatoes, green peas and bell pepper. Simmer until all are soft and tender.
- Adjust seasoning with salt and pepper according to taste.
- Keep simmering until juices are almost out.
- Transfer to a serving dish.
- *If you want some juice/sauce, add cornstarch to the mixture to thicken the sauce. then remove from heat.
