- 2 1/4 c. all-purpose flour
- 1 T double-acting baking pwdr
- 1/2 teaspoon each salt & grnd cinnamon
- 1/2 c. butter
- 1/2 c. granulated sugar
- 1 egg
- 3 very ripe bananas, peeled & mashed
- 3/4 c. raisins

- Preheat oven to 350 degrees. Spray 9 x 5 x 3 inch loaf pan with nonstick cooking spray. Set aside.Sift together dry ingredients. In large mixing bowl put together butter and sugar. Using electric mixer, beat till creamy and light; add in vanilla and beat till thoroughly combined, but don't over beat as this will toughen bread.
- Add in sifted dry ingredients alternately with bananas, beating after each addition. Stir in raisins and pour batter into sprayed pan. Bake 50 min. Remove from heat and cool. Makes 12 servings.
