- 3 1/4 c. unsifted flour
- 4 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon salt
- 2 c. ripe mashed banana (about 4-6 med.)
- 1 1/2 c. sugar
- 2 large eggs
- 2/3 c. butter, melted
- 1/2 c. lowfat milk
- 2 2/3 c. minced pecans, divided
- 1 (12 ounce) butterscotch morsels

- Preheat oven to 350 degrees. In a small bowl put together first 6 ingredients; set aside. In a large bowl put together bananas, large eggs, sugar, and butter. Beat till creamy. Gradually add in flour mix alternately with lowfat milk; mix till well blended. Stir in 2 cups pecans and butterscotch morsels. Pour batter into 2 well greased and lightly floured 9 x 5 x 3 loaf pans. Sprinkle with remaining pecans. Bake 60-70 min. Cool 15 min before removing loaves from pans.
