  • 3 1/4 c. unsifted flour
  • 4 teaspoon baking pwdr
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 2 c. ripe mashed banana (about 4-6 med.)
  • 1 1/2 c. sugar
  • 2 large eggs
  • 2/3 c. butter, melted
  • 1/2 c. lowfat milk
  • 2 2/3 c. minced pecans, divided
  • 1 (12 ounce) butterscotch morsels

  1. Preheat oven to 350 degrees. In a small bowl put together first 6 ingredients; set aside. In a large bowl put together bananas, large eggs, sugar, and butter. Beat till creamy. Gradually add in flour mix alternately with lowfat milk; mix till well blended. Stir in 2 cups pecans and butterscotch morsels. Pour batter into 2 well greased and lightly floured 9 x 5 x 3 loaf pans. Sprinkle with remaining pecans. Bake 60-70 min. Cool 15 min before removing loaves from pans.
