- Scrub 2 large (8-10 ounce) baking potatoes. Cut each in half lengthwise. Cut each half into 4 spears. Place potatoes in large pot of lightly salted boiling water, bring water back to boil and boil 3 min. Drain in colander.
- Spray cooking sheet with cooking spray.
- Mix 1 Tbsp. extra virgin olive oil and potatoes in bowl.
- Mix 1/2 tsp. paprika and 1/4 tsp. salt together, toss over potatoes. Mix well.
- Bake in preheated 400 oven for 15 min or possibly till tender.
- Place in paper towel lined basket or possibly bowl. Toss gently with 1 Tbsp. graded Parmesan Cheese. Serve warm.
- Makes 2 servings Can add in other spices to salt mix for different flavors.
