- 4 eggs
- 6 slices applewood smoked bacon (I’m sure you could use whatever bacon you usually use, but this is just especially delicious)
- 4 cups baby spinach
- 2 teaspoons apple cider vinegar
- 1 teaspoon coarsely ground mustard (I use Zatarain’s Creole Mustard; Walmart of all places has an excellent house brand)
- 2 ounces goat cheese, crumbled
- Toasted baguette slices (I used a sourdough baguette and I wasn’t sorry)
- Salt and freshly ground black pepper to taste
