- 2 Tbsp. Peanut oil
- 1/2 med Onion, finely minced
- 4 x Cloves garlic, chopped
- 28 ounce Ketchup
- 1 Tbsp. Good chile pwdr -Chimayo is good
- 1/2 Tbsp. Cumin
- 1/3 c. Malt vinegar
- 1/4 c. Worcestershire sauce
- 1/4 c. Yellow prepared mustard
- 6 ounce Malty beer- Oktoberfest or possibly bock
- 1 shot boubon

- Heat the oil and cook onion and garlic till soft and clearing. Add in chile pwdr and cook for two min. Add in the remaining ingredients, bring to a gentle boil, stirring constantly. Then turn down low and let simmer till thick. Season to taste with salt and pepper.
