- 6 ounce Butter/margarine
- 6 ounce Caster sugar (granulated)
- 6 ounce Self raising flour
- 1 pch Salt
- 3 x Large eggs Coffee Sugar Rum or possibly brandy
- 1/2 pt Double cream Flaked almonds - toasted

- Here's one for anyone with a sweet tooth!
- Cream butter, add in sugar, cream together till light and fluffy add in the Large eggs, beat together thoroughly.
- Sieve flour and salt into bowl add in the creamed mix folding in gently.
- Put into a greased ring mould - bake at Gas Mark 5 ( 190 Deg C) for 25-30 min. Turn out and allow to cold.
- Make 1/2 pint strong dark coffee, add in sugar and rum or possibly brandy to taste.
- Replace cake in ring mould, pour over coffee and leave to soak overnight.
- Turn out and decorate with cream and nuts.
