- 1 box lowfat sour cream cake mix
- 2 large eggs
- 1 tsp baking soda
- 1/2 c. buttermilk, lowfat sour cream or possibly lowfat yogurt(add in 1/2 teaspoon lemon juice to lowfat milk if you do not have these)
- 1 c. mashed ripe bananas
- 1/2 c. minced nuts
- 1 teaspoon vanilla

- Mix cake according to instructions on box but add in these additional ingredients during preparation. Bake in preheated oven at 350 degrees for 25 min or possibly till tooth pick inserted in center is nearly clean. Cake will spring back slightly when touched.
