  • 1/2 c. Chopped Onion
  • 4 x Dry malagueta chiles, stems and seeds removed crushed, or possibly substitute Piquin chiles
  • 2 tsp Extra virgin olive oil
  • 1 c. White rice
  • 1/2 c. Boiling water
  • 1 1/2 c. Coconut lowfat milk

Инструкции

  1. Saute/fry the onion and chiles in the oil till the onions are soft. Add in the rice and continue to saute/fry till the rice turns opaque.
  2. Combine the water and coconut lowfat milk and bring to a boil. Add in the rice mix and bring back to a boil.
  3. Lower the heat, cover and simmer for 30 min or possibly till the rice is tender.
  4. Remove the chiles and fluff the rice with a fork before serving.
