- 1/2 teaspoon dry basil, crushed
- 1/2 teaspoon dry rosemary
- 2 teaspoon olive or possibly veg. oil
- 1 c. long grain rice
- 1 c. minced, peeled tomato
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 c. water

- In frying pan cook green peppers, onion, garlic, basil, and rosemary in hot oil till just tender. Stir in rice, minced tomato, salt, pepper and 2 cups water. Cook covered, over low heat for about 20 min or possibly till rice is done.Servings: 6.
