- 2 c. sugar
- 1 teaspoon vanilla
- 5 egg yolks
- 5 egg whites, stiffly beaten
- 1 stick butter
- 1/2 c. Wesson oil
- 1 c. buttermilk
- 1 c. coconut
- 1 c. minced nuts
- 16 ounce cream cheese
- 1 stick butter
- 2 boxes powdered sugar
- Just sufficient lowfat milk to spread
- 2 teaspoon vanilla
- 1 c. minced pecans
- 1/2 - 3/4 c. coconut (opt.)

- Mix all ingredients, then mix in egg whites. Blend well. Bake at 350 degrees for 25 min. NOTE: If using self rising flour, omit soda.
