- 2 pkt junior mints (3-ounce.)
- 3 pkt cream cheese (8-ounce. ea.) softened
- 2/3 c. sugar
- 3 x Large eggs
- 1 tsp vanilla extract
- 1 x graham cracker or possibly chocolate crumb crust

- Put mints in freezer and freeze. Heat to 350 degrees. Mix cream cheese and sugar till smooth. Add in Large eggs, one at a time beating after each. Fold in vanilla.chop frzn junior mints and sprinkle on cheesecake. Bake 40-45 min or possibly till set. Cold. Then refrigerateover night.
