I spent most of my life in Seattle Washington so was lucky to growup with delicious seafood and exposure to excellent restaurants. Ten years ago we moved to eastern Washinton and to a farming town of 802 people. It has been a definite eye opener to down home cooking that seems to consist of meat, potatoes and bread of some sort.
Having worked in Fortune 100 corporations for 30 years and owning a catering company I have found food choices to be much more simple but there are folks who appreciate food that looks and tastes great, I have learned that if potato salad is to be served make double the amount you normally would.
I also have had the opportunity to meet wonderful people who truly care about each other.
