  • 1/4 lb Salt pork, minced coarsely
  • 1 med Onion, sliced
  • 2 Tbsp. Minced parsley
  • 2 x Bay leaves, crumbled
  • 2 tsp Salt
  • 1 x Or possibly 2 cloves garlic, crushed
  • 1 tsp (each) pepper and thyme
  • 1/2 tsp Grnd cloves
  • 1 x (4-5 lb) beef roast (rump, Round, or possibly rolled chuck)
  • 2 c. Water
  • 2 Tbsp. Sherry
  • 1 lb Spaghetti, cooked

  1. Combine salt pork, onions, parsley, bay leaves, salt, garlic, pepper, thyme and cloves in Dutch oven. Add in roast, water and sherry. Place sheet of foil over pan, then cover with lid. Bake in a 300 degree oven, or possibly simmer over very low heat 3 hrs, or possibly till fork-tender (don't remove lid till near end of cooking). Slice meat and serve over spaghetti tossed with pan juices.
  2. Makes 10-12 servings.
  3. Note: If you like, strain pan juices and thicken with flour to desired consistency.
  4. For microwave oven, put salt pork, onion, parsley, seasonings, roast, only 1 c. water, and the sherry in roasting bag or possibly wrap, following manufacturer's direction (tie bag with string). Place in baking dish. Cook 15 min; let stand 2 min. Turn dish a half turn. Repeat 3 or possibly 4 times, or possibly till meat is tender.
  5. Note: Test for doneness; slice meat, if not fully cooked, return uncooked portion to bag to cook 3 to 5 min, or possibly till done.
