  • 1 x Fillets John Dory or possibly similar fish Jersey Royal potatoes Minced black olives and chives Fresh herbs Lemon juice Extra virgin olive oil Tomatoes Chives Garlic Shallots Bouquet garni Extra virgin olive oil Shallots Salt Thyme Bay leaf

Инструкции

  1. Boil the Jersey Royal potatoes till tender, cold, peel and place in a large bowl. Gently heat two tbsp. of extra virgin olive oil, pour over the potatoes and crush with a fork till chunky.
  2. Fold in Tomato Concasse, the Shallot Confit, half the minced black olives and chives into a small saucepan. Heat just before serving. Cut the fillets of fish into diamond shapes and lightly fry in extra virgin olive oil till golden brown.
  3. Press potato mix into small rounds on a serving plate, top with the cooked fish. Bring the sauce to the boil, spoon around each mound and serve.
