Рецепт Zucchini Corn Casserole
A great vegetable dish. Easy to make and delicious!
Ингредиенты
- 4 med zucchini, diced
- 1 med red onion, diced
- 16 oz package frozen corn
- 16 oz shredded jalapeno jack or pepper jack cheese
- 1 tsp olive oil
- 1 tsp butter
- salt and pepper
- 1/2 c crushed tortilla chips (optional)
Инструкции
- Dice zucchini, put in skillet and cook in 1 tbls olive oil and 1 tbls butter until tender. Remove from pan.
- Dice med red onion and cook until translucent, remove from skillet.
- Put the frozen corn in skillet and heat until warm then add to zucchini and onion.
- Put zucchini, onion and corn in oven safe casserole dish. Add 1 1/2 cup jalapeno jack or pepper jack shredded cheese, mix well.
- Top with remaining 1/2 cup cheese and 1/2 cup crushed tortilla chips (optional)
