s%20of%20wine%20while%20it%20cooks.%3C/p%3E%3Cp%3EThis%20is%20a%20savoroy%20pie,%20filled%20with%20peppers,%20onions%20and%20spinach.%20I%20used%20a%20bit%20of%20sausage%20but%20you%20could%20easily%20use%20cooked%20chicken,%20beef%20or%20ham;%20just%20not%20too%20much%20or%20it%20won't%20'puff'%20properly.%3C/p%3E%3Cp%3EYorkshire%20Pudding%20Pie%3C/p%3E%3Cp%3EPeel%20and%20chop%20onion,%20garlic.%20Chop%20pepper,%20celery.%20Heat%202%20tsp%20olive%20oil%20in%20medium%20nonstick%20skillet%20over%20medium-high%20heat.%20Add%20onion,%20pepper,%20celery,%20garlic%20and%20saut%C3%A9%20until%20tender.%20Add%20sausage%20and%20brown,%20breaking%20it%20up%20as%20it%20cooks.%20When%20done%20remove%20from%20heat.%20Thaw%20spinach%20and%20squeeze%20dry.%20Add%20to%20meat%20mixture%20along%20with%20basil%20and%20mix%20thoroughly.%3C/p%3E%3Cp%3ESlice%20tomatoes%20thinly:%205%20-%207%20slices%20per%20tomato.%3C/p%3E%3Cp%3EIn%20medium%20bowl%20lightly%20beat%20eggs%20with%20wire%20whisk.%20Add%20milk,%20flour,%20salt%20and%20nutmeg.%20Beat%20lightly%20to%20just%20combine;%20a%20few%20lumps%20are%20okay%20-%20over-beating%20is%20not.%20Put%20remaining%202%20tsp%20olive%20oil%20in%2010-inch%20glass%20baking%20dish%20and%20run%20it%20around%20to%20coat%20the%20bottom.%20Pour%20in%20the%20batter%20mixture.%20Spoon%20meat/spinach%20mixture%20over%20top%20to%20within%201%20inch%20of%20sides%20of%20dish.%20Layer%20tomatoes%20on%20top%20of%20meat%20and%20sprinkle%20with%20cheese.%3C/p%3E%3Cp%3EBake%20at%20425F%20(215C)%20for%2030%20minutes%20or%20until%20edges%20puff%20up%20and%20are%20golden%20brown.%20Cut%20into%20wedges%20and%20serve.%3C/p%3E%3Cp%3ENow%20I'd%20better%20put%20pencil%20to%20paper%20and%20make%20sure%20I%20ordered%20enough%20tile...%3C/p%3E%3Cp%3EMon%20mari%20just%20remembered%20that%20he%20forgot%20to%20tell%20me%20we%20need%20some%20for%20the%20tub%20surround...%3C/p%3E%3Cp%3EI%20see%20another%20glass%20of%20wine%20in%20my%20future.%3C/p%3E){kind=link}
