.%20%20I'm%20in%20my%20home%20town,%20Hong%20Kong,%20for%20three%20months%20during%20my%20uni%20holidays.%20%20The%20ironic%20thing%20is,%20my%20Christmas%20will%20still%20be%20spent%20under%20a%20hot%20sun%20as%20I%20will%20be%20going%20to%20Thailand,%20as%20tradition%20calls.%3C/p%3E%3Cp%3EThe%20good%20news%20is,%20there%20will%20be%20some%20Christmas%20recipes%20coming%20very%20soon!%20%20I%20would%20never%20neglect%20baking%20something%20to%20celebrate%20one%20of%20my%20favorite%20holidays.%20%20However,%20since%20I%20haven't%20got%20a%20Christmas%20baked%20good%20to%20share%20with%20you%20yet,%20here's%20a%20cake%20that%20evokes%20all%20the%20feelings%20of%20winter%20holidays,%20warm%20fireplaces%20and%20cozy%20blankets.%3C/p%3E%3Cp%3EI%20was%20hesitant%20about%20posting%20this%20because%20the%20cake%20didn't%20come%20out%20as%20perfect%20as%20I%20would%20have%20liked.%20%20I%20was%20too%20lazy%20to%20get%20out%20the%20electric%20mixer%20because%20it%20was%20buried%20under%20a%20stack%20of%20I-Haven't-Seen-This-In-Months-I'll-Organize-It-Later,%20so%20I%20mixed%20by%20hand%20and%20didn't%20stir%20for%20the%20required%20length%20of%20time.%20%20The%20oil%20hadn't%20quite%20emulsified%20into%20the%20cake%20batter%20when%20I%20scraped%20it%20into%20the%20pan%20and%20the%20crumb%20came%20out%20denser%20than%20expected.%20%20I%20used%20small%20eggs%20instead%20of%20large.%20%20I%20forgot%20to%20reduce%20the%20sugar%20in%20the%20cake%20and%20accidentally%20sprinkled%20on%20a%20couple%20more%20teaspoons%20of%20sugar%20on%20the%20top%20than%20necessary%20(I%20have%20problems%20opening%20unopened%20bags%20of%20food,%20okay?%20%20Let's%20move%20past%20it),%20so%20to%20me%20the%20cake%20was%20a%20bit%20on%20the%20sweet%20side.%20%20I%20forgot%20to%20peel%20and%20cut%20the%20apples%20until%20I'd%20combined%20the%20batter,%20and%20so%20left%20it%20sitting%20there%20for%2010%20minutes%20while%20I%20chopped%20up%20apples%20and%20walnuts,%20which%20probably%20didn't%20have%20too%20great%20an%20effect%20on%20the%20cake%20either.%3C/p%3E%3Cp%3EBut%20I'm%20posting%20this%20anyway%20because%20I%20know%20this%20cake%20is%20great.%20%20If%20you%20follow%20the%20instructions,%20as%20I%20neglected%20to%20do,%20it%20will%20turn%20out%20beautifully.%20%20Regardless%20of%20it%20all,%20the%20cake%20tastes%20homey,%20warm%20and%20hearty,%20because%20of%20the%20whole%20wheat%20flour%20and%20spices,%20and%20the%20apples%20and%20walnuts%20provide%20good%20texture.%20%20It's%20perhaps%20not%20the%20prettiest%20of%20cakes%20-%20it%20won't%20win%20any%20prizes%20at%20a%20cake%20competition%20anytime%20soon%20-%20this%20is%20an%20everyday%20dessert%20with%20the%20typical%20rustic%20charm%20that%20comes%20with%20this%20sort%20of%20baked%20good.%20%20More%20often%20than%20not,%20it's%20just%20what%20is%20needed%20in%20this%20busy%20season.%3C/p%3E%3Cp%3EOh!%20%20And%20let%20me%20introduce%20you%20to%20my%20cat,%20who%20takes%20up%20permanent%20residency%20here%20in%20HK.%20%20He's%20the%20baby%20of%20the%20house%20and%20will%20be%20showing%20up%20a%20lot%20more%20in%20future%20posts.%20%20Like%20most%20cats,%20he%20can't%20quite%20ever%20leave%20anything%20alone.%3C/p%3E%3Cp%3EWhole%20Wheat%20Apple%20&%20Walnut%20Cake%20%7BTeddie's%20Cake%7D%3C/p%3E%3Cp%3ENote:%20I%20would%20advise%20dialing%20down%20the%20sugar%20to%203/4%20cup,%20because%20this%20really%20is%20quite%20a%20sweet%20cake.%20%20But%20that's%20completely%20up%20to%20you%20and%20your%20personal%20taste.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350F/175C.%20%20Grease%20and%20line%20a%209-inch%20round%20cake%20tin.%3C/p%3E%3Cp%3EWash,%20peel,%20core%20and%20cut%20your%20apples,%20then%20set%20aside%20in%20a%20bowl.%20%20You%20want%20thick%20slices,%20otherwise%20they'll%20disappear%20into%20the%20cake.%20%20While%20you're%20at%20it,%20roughly%20chop%20the%20walnuts.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20flours,%20cinnamon,%20baking%20soda%20and%20salt.%20%20Set%20aside.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer,%20with%20a%20handheld%20electric%20mixer%20or%20with%20a%20wooden%20spoon%20and%20some%20patience,%20combine%20the%20brown%20sugar%20and%20oil,%20mixing%20until%20the%20mixture%20is%20cohesive%20(about%20five%20minutes).%20%20Add%20the%20eggs%20and%20vanilla%20and%20beat%20until%20the%20mixture%20looks%20creamy.%3C/p%3E%3Cp%3EAdd%20the%20dry%20ingredients%20and%20stir%20by%20hand%20until%20just%20combined.%20%20Fold%20in%20apples%20and%20walnuts.%20%20Scrape%20the%20mixture%20into%20the%20prepared%20tin%20and%20smooth%20the%20top%20with%20a%20spatula.%20%20Sprinkle%20with%20demerara%20sugar.%3C/p%3E%3Cp%3EBake%20for%2045-50%20minutes,%20or%20until%20a%20skewer%20inserted%20comes%20out%20clean.%20%20Let%20cool%20before%20turning%20out%20and%20slicing.%20(As%20usual,%20I%20didn't%20wait%20for%20it%20to%20cool,%20which%20is%20why%20my%20cake%20slice%20looks%20wonky%20and%20uneven).%3C/p%3E){kind=link}
