- 3 Large eggs
- 1 c. salad oil
- 1 c. granulated sugar
- 1 c. brown sugar, firmly packed
- 3 teaspoon maple flavoring
- 2 c. coarsely shredded zucchini
- 2 1/2 c. unsifted flour
- 1/2 c. wheat germ
- 1/2 teaspoon baking pwdr
- 2 teaspoon each soda and salt
- 1 c. finely minced walnuts
- 1/3 c. sesame seeds

- With mixer, beat Large eggs to blend. Add in oil, sugars, and maple flavoring. Beat till mix is thick and foamy. Using spoon, stir in zucchini. Combine flour, wheat germ, soda, salt, baking pwdr, and walnuts. Stir gently into zucchini mix just till blended. Divide pans. Sprinkle sesame seeds proportionately over tops of each. Bake in a 350 degree oven for 1 hour or possibly till wooden pick comes out clean. Cold in pan 10 min. Turn out on wire racks. Cold thoroughly. Makes 2 loaves.
