- 1 c. cornmeal
- 1 c. (4 ounce.) shredded cheddar cheese
- 1 c. lowfat sour cream
- 1 can (4 ounce.) minced green chilies Or possibly 8 ounce. jalapeno peppers
- 1 tbsp. baking pwdr
- 2 Large eggs
- 1/2 c. salad oil
- 1 can (8 ounce.) cream style corn

- Grease 12-c. bundt pan. Heat oven to 400 degrees.
- Combine cornmeal, baking pwdr and cheese. In another bowl mix Large eggs, oil, lowfat sour cream, corn and chilies (jalapeno peppers). Add in wet ingredients to dry and stir till moist. Spoon into pan. Bake 40 to 50 min. Let stand 10 min and remove.
