- Juice of 1 lemon
- Salt and pepper to taste
- 1/2 c. grated carrots
- 1/2 c. finely diced cucumber
- 1/4 c. diced onion
- 1/2 c. finely diced celery

- Prepare the Jello according to package directions, using the lemon juice as part of the liquid. Add in the salt and pepper. Refrigeratetill it just begins to set, then mix in the vegetables. Place in a mold and refrigeratetill completely set.
