- 1/3 cup nog (again, your own or Silk)

,%20'ummm...%20make%20cookies'.%3C/p%3E%3Cp%3EThese%20delicious%20'egg'nog%20cookies%20worked%20out%20to%20be%20super%20easy%20and%20absolutely%20delicious,%20especially%20with%20the%20'egg'nog%20frosting%20that%20I%20swirled%20on%20top.%3C/p%3E%3Cp%3EYield:%20about%2024%20cookies%3C/p%3E%3Cp%3ERecipe%20veganized%20from%20good%20old%20Betty%20Crocker%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20300%20degrees.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20ground%20flax%20seed%20and%20water.%20Stir%20well%20with%20a%20fork%20and%20set%20aside%20to%20allow%20it%20to%20set%20up.%3C/p%3E%3Cp%3EIn%20a%20medium%20mixing%20bowl,%20combine%20flour,%20baking%20powder,%20cinnamon%20and%20nutmeg.%20Stir%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%20Kitchenaid%20or%20bowl%20with%20mixer,%20cream%20together%20sugar%20and%20Earth%20Balance.%20Add%20'egg'nog,%20vanilla%20and%20flax%20seed/water%20mix.%20Note:%20by%20now%20it's%20formed%20into%20a%20thick%20substance.%20Give%20it%20another%20quick%20stir%20before%20you%20add%20it.%3C/p%3E%3Cp%3EWith%20the%20Kitchenaid/Beater%20on,%20slowly%20add%20the%20dry%20ingredients.%20Mix%20until%20just%20combined%20then%20turn%20off%20the%20Kitchenaid.%3C/p%3E%3Cp%3EDrop%20dough%20in%20even%20rounded%20teaspoons%20onto%20an%20ungreased%20cookie%20sheet.%20Note:%20I%20always%20line%20my%20cookie%20sheets%20with%20foil,%20for%20easy%20cleaning.%3C/p%3E%3Cp%3ESprinkle%20each%20with%20a%20touch%20of%20nutmeg%20and%20bake%20for%2023-25%20minutes.%3C/p%3E%3Cp%3EWhen%20finished,%20transfer%20to%20cooling%20rack%20and%20repeate%20until%20dough%20is%20gone.%3C/p%3E%3Cp%3EWhile%20you%20are%20baking%20your%20cookies%20you%20can%20prepare%20your%20frosting.%3C/p%3E%3Cp%3EUsing%20a%20Kitchenaid%20or%20bowl%20with%20beater,%20simply%20cream%20sugar%20and%20butter%20together%20then%20slowly%20add%20eggnog.%20Mix%20until%20completely%20combined%20and%20smooth.%3C/p%3E%3Cp%3ETransfer%20your%20frosting%20into%20a%20ziploc%20bag.%20When%20you%20are%20ready%20to%20frost,%20clip%20a%20small%20(be%20careful!)%20piece%20of%20one%20of%20the%20corners%20off%20the%20bag%20creating%20a%20perfect%20frosting%20bag.%3C/p%3E%3Cp%3ETo%20frost:%20You%20can%20do%20it%20any%20way%20you%20like...%20swirly,%20squiggly,%20polka%20dotty,%20get%20creative!%20You%20can%20also%20forgo%20the%20bag%20and%20simply%20use%20a%20frosting%20knife%20to%20completely%20cover%20the%20top%20of%20the%20cookie.%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EThese%20little%20darlings%20are%20great%20on%20their%20own,%20with%20a%20tall%20cup%20of%20cold%20soy%20milk%20or,%20even%20better,%20with%20some%20vanilla,%20chocolate%20or%20even%20nog%20(for%20those%20of%20you%20who%20can't%20get%20enough)%20soy%20ice%20cream.%3C/p%3E%3Cp%3EEnjoy%20and%20take%20advantage%20of%20this%20fantastic%20beverage...%20and%20the%20holiday%20season!%3C/p%3E%3Cp%3EHoliday%20Eggnog%3C/p%3E){kind=link}
