%20should%20have%20in%20their%20profile:%20carrot%20cake%20and%20zucchini%20bread.%20Luckily%20both%20featured%20vegetables%20are%20highly%20available%20this%20time%20of%20year.%20So%20much%20so%20that%20it%20was%20a%20zucchini%20free%20for%20all%20at%20our%20CSA%20pick%20up%20last%20week.%20That%20post%20coming%20soon.%3C/p%3E%3Cp%3ECarrots?%20We%20get%20carrots%20in%20our%20pick-up%20almost%20every%20week;%20unfortunately%20for%20my%20carrot%20cake%20endeavours,%20I%20end%20up%20devouring%20them%20raw,%20dirt%20and%20all,%20before%20I%20can%20use%20them%20for%20anything%20else.%20Sometimes%20I'm%20even%20couth%20enough%20to%20smear%20them%20with%20peanut%20butter%20before%20total%20inhalation.%3C/p%3E%3Cp%3EI%20like%20carrots.%20Though,%20random%20fact:%20carrots%20give%20me%20a%20mad%20case%20of%20the%20hiccups.%20I%20used%20to%20think%20this%20was%20really%20weird%20until%20one%20day%20my%20mom%20randomly%20informed%20me%20that%20carrots%20give%20her%20hiccups.%20Must%20run%20in%20the%20family.%3C/p%3E%3Cp%3EBut%20with%20the%20start%20of%20school%20just%20around%20the%20corner%20(next%20Friday!!)%20I%20have%20been%20prepping%20and%20freezing%20things%20I%20like%20to%20call%20my%20'totally%20awesome%20lunch%20supplies'.%20Because%20this%20year%20I%20vow%20as%20I%20do%20every%20year%20to%20be%20the%20mom%20that%20makes%20the%20best%20lunches%20ever%20known%20to%20mankind.%3C/p%3E%3Cp%3E'Best%20lunches%20ever%20known%20to%20mankind%20without%20the%20addition%20of%20a%20bunch%20of%20processed%20junk%20like%20GoGurt,%20Capri%20Sun,%20plastic%20cheese,%20white%20bread%20and%20other%20nastiness%20that%20no%20one,%20even%20rabid%20cats%20and%20ferile%20dogs,%20should%20eat.'%20Now%20that's%20a%20title.%3C/p%3E%3Cp%3EAnd%20so,%20delicious%20and%20healthy%20yet%20totally%20mouthwatering%20carrot%20cake%20muffins%20are%20on%20the%20list.%20Along%20with%20some%20other%20fun%20items%20which%20I%20will%20post%20soon.%3C/p%3E%3Cp%3EThese%20carrot%20cake%20muffins%20were%20moist,%20barely%20sweet,%20fluffy%20and%20perfectly%20balanced%20with%20carrots,%20spices%20and%20raisins.%20And%20if%20you%20wanted%20to%20get%20totally%20crazy%20you%20could%20whip%20up%20a%20batch%20of%20cream%20cheese%20frosting%20to%20go%20on%20top.%20Or%20better%20yet,%20egg%20nog%20frosting.%20Stick%20a%20candle%20in%20it%20and%20you're%20good%20to%20go.%20Or%20don't,%20and%20just%20stick%20it%20in%20your%20mouth.%20It's%20still%20healthier%20than%20a%20box%20mix.%3C/p%3E%3Cp%3EYour%20kids%20will%20love%20these%20muffins.%20They%20will%20be%20the%20talk%20around%20the%20lunch%20table.%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20and%20line%20muffin%20tins%20with%20muffin%20liners.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20egg%20replacer%20and%20So%20Delicious%20coconut%20milk.%20Whip%20together%20with%20a%20fork%20until%20fully%20combine%20and%20lump%20free.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20combine%20both%20flours,%20salt,%20baking%20soda,%20baking%20powder,%20cinnamon%20and%20nutmeg.%20Whisk%20to%20combine%20then%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20Kitchenaid,%20or%20bowl,%20combine%20sugar,%20vegetable%20oil%20and%20applesauce.%20Mix%20on%20low%20until%20combined%20then%20add%20egg%20replacer%20mixture%20and%20continue%20to%20mix.%3C/p%3E%3Cp%3EWith%20the%20Kitchenaid%20on%20low,%20gradually%20add%20flour%20mixture%20until%20just%20combined%20then%20fold%20in%20carrot%20and%20raisins.%20Mix%20gently%20until%20evenly%20incorporated.%3C/p%3E%3Cp%3EFill%20muffin%20tins%20a%20smidge%20over%203/4%20full%20and%20bake%2024%20to%2026%20minutes,%20until%20golden%20brown%20and%20a%20stick%20inserted%20in%20the%20middle%20comes%20out%20clean.%20Do%20not%20over%20bake.%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20let%20cool%20before%20you%20frost,%20if%20you%20choose%20to%20frost.%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3E'Naked'%20and%20fresh%20from%20the%20oven%20or%20frosted%20with%20cream%20cheese%20or%20egg%20nog%20frosting.%3C/p%3E%3Cp%3EYou%20could%20add%20a%20little%20So%20Delicious%20coconut%20ice%20cream%20and%20serve%20them%20for%20dessert%20or%20feature%20them%20'naked'%20for%20breakfast,%20lunch%20or%20snack%20time.%3C/p%3E%3Cp%3EThey%20also%20freeze%20well.%20Just%20make%20sure%20they%20are%20completely%20cooled,%20then%20pack%20in%20freezer%20bags%20or%20other%20freezer%20safe%20container.%20Before%20serving,%20remove%20from%20freezer%20and%20let%20defrost%20on%20the%20counter%20or%20in%20a%20lunch%20bag.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
