- 1/4 c. chopped parsley
- 3/4 teaspoon salt
- 1/2 c. finely minced spinach
- 1 teaspoon thyme
- 1 shallot, chopped
- 1 egg
- Fresh grnd black pepper to taste

- Mix all ingredients together. Refrigeratefor 30 min. Form into patties. Fry in butter till nicely browned. Don't over-cook this sausage.
