Tzatziki is a very popular Greek salad / dip made with cucumber, yogurt and garlic. This cucumber salad is one of the most popular Greek vegetarian appetizer recipes with plenty of local variations. It is refreshing, tasty and very easy to make.
If you can’t find Greek yogurt (very thick- like sour cream) you can pour natural yogurt in a coffee filter and leave for some hours (or overnight) to drain excess liquid to make it thicker.
Not a garlic lover? If you don’t fancy garlic, this cucumber dip is tasty also without it! You can also add a few minced fresh mint leaves if you like.
Tzatziki can be served with fried eggplant or zucchini slices, pita crisps, or anything you like. It can be served as an appetizer or side dish, stuffed in a sandwich, pita or wrap. This is a very versatile dish!
The cucumber dip will last for up to a week in the fridge, simply stir if the water from the cucumber separates. The garlic will intensify in taste after a while; 1 clove is mild, 2 cloves will become strong!

- 1 long cucumber, shredded
- Salt
- 1 cup Greek style yogurt
- 1 tbs. chopped fresh or ½ tbs. dried dill
- 2 tbs. olive oil
- 1 garlic clove pressed
- Salt and pepper
Инструкции
- Sprinkle the cucumber with salt and place in a colander to drain for 30 min. Meanwhile, in a small bowl mix all the other ingredients and season to taste.
- Squeeze out as much liquid as you can from the cucumbers with your hands and add them to the yogurt mix. Serve the dip chilled with for example home made pita crisps.
