- 40 slices Texas Toast
- dijon mustard as needed
- cheddar jack cheese, as needed
- 5 lbs deli turkey breast (4 oz per serving)
- ground pepper as needed
- cranberry sauce as needed
- 1 1/2 dz. large eggs
- 1 3/4 cup whole milk
- 1 lb butter
- 2 cup vegetable oil

- Lay the bread out on the work surface.
- Spread one side of each slice with the mustard.
- Spread half of the cheese on one slice of bread.
- Cover with half of the turkey and season with salt and pepper to taste.
- Evenly spread the cranberry sauce on the turkey on the sandwich.
- Top with the remaining turkey; season with salt and pepper to taste, and cover with the remaining cheese and bread. Press down slightly on each sandwich.
- In a bowl, whisk together the eggs and milk. Season with salt and pepper to taste.
- Preheat tilt grill to 350 degrees F. Heat tilt grill, and add both margarine and oil to the grill.
- Dip and coat each of the sanwiches in the egg mixture and lay in the grill. Cook until golden brown, about 4 minutes per side.
- Transfer the sandwiches to a baking sheet and bake until the cheese is melted, about 6 to 8 minutes.
