- 1 c. nonfat plain yogurt
- 2/3 c. canned tomatoes liquid removed
- 1 Tbsp. sugar
- 1 tsp lemon zest
- Â Â ice cubes optional

- Cook the carrot till tender. Puree the cooked carrot in a food processor or possibly blender and process till pureed. Add in the yogurt, tomatoes, sugar, and lemon zest. Process for 1 minute.
