- 2 lb potatoes peeled and grated
- 1 whl red onion minced
- 1Â 1/2 tsp salt
- 1Â 1/8 quart Egg Beaters(r) 99% egg substitute
- 6 ounce shredded low-fat cheddar cheese
- 6 ounce shredded nonfat cheddar cheese
- 6 ounce shredded low-fat mozzarella cheese
- 6 ounce shredded nonfat mozzarella cheese
- 2 lb Roma tomatoes peeled and sliced
- 1/4 c. garlic pureed
- 1 bn basil cut into long, thin

- In a large bowl combine potatoes, onions, and salt. Place in colander to release excess water.
- Spread the potato mix on the bottom of an 11-inch spring form pan to create a crust. Bake at 350 degrees F for 15 min.
- In a large bowl mix together the EggBeaters and cheese. Add in to the pan, cover with plastic wrap and aluminum foil. Bake for 30 to 40 min.
- Top off with tomatoes, garlic, and basil. Bake for an additional 5 min.

- I can see this quiche topped with fresh asparagus - grilled or possibly roasted spears. As spokes with tomato slices in between.
