%20everyone%20else%20is%20finished%20celebrating%20and%20has%20%E2%80%9Cmoved%20on%E2%80%9D%20to%20other%20things.%3C/p%3E%3Cp%3EThat%E2%80%99s%20why%20I%20have%20sort%20of%20%E2%80%9Cadopted%E2%80%9D%20a%20holiday%20in%20January%20to%20make%20my%20very%20%20own.%20%20A%20holiday%20to%20do%20%E2%80%9Cmy%20way,%E2%80%9D%20to%20have%20a%20little%20fun%20without%20all%20of%20the%20%E2%80%9Crequired%E2%80%9D%20activities,%20to%20celebrate%20however%20I%20%E2%80%9Cfeel%20like%20it%E2%80%9D%20and%20serve%20food%20that%20is%20totally%20different%20and%20fun%20(or%20slightly%20crazy,%20however%20you%20look%20at%20it)%20or%20whatever%20I%20want%20each%20year.%20%20Sounds%20perfect,%20doesn%E2%80%99t%20it?%3C/p%3E%3Cp%3EThis%20year,%20I%20decided%20to%20stray%20from%20our%20%E2%80%9Ctraditional%20Elvis%20Sandwich%E2%80%9C%20dinner%20party%20and%20go%20a%20little%20crazy%20with%20the%20whole%20%E2%80%9Cpeanut%20butter%20and%20fried%20bananas%E2%80%9D%20theme.%20%20We%20had%20an%20%E2%80%9CElvis%20Peanut%20Butter%20and%20Bananas%20Pancake%E2%80%9D%20dinner%20instead.%20%20I%20must%20say%20it%20was%20amazing!%3C/p%3E%3Cp%3EI%20really%20didn%E2%80%99t%20know%20what%20I%20expected%20out%20of%20pancakes%20that%20were%20smothered%20with%20peanut%20butter%20but,%20I%20must%20say,%20%20my%20whole%20family%20loved%20them!%20%20Even%20my%20husband.%20%20You%20remember%20him%E2%80%A6%20the%20guy%20who%20doesn%E2%80%99t%20think%20something%20is%20actually%20food%20if%20it%20is%20not%20Mexican%20food.%20%20Ya,%20that%20guy!%20%20He%20loved%20them!%3C/p%3E%3Cp%3EThe%20first%20batch%20of%20pancakes%20that%20I%20made%20had%20peanut%20butter%20in%20the%20pancake%20batter,%20itself.%20%20I%20found%20that%20the%20batter%20browned%20way%20too%20fast%20and%20burned%20before%20the%20middle%20was%20fully%20cooked.%20%20When%20I%20reduced%20the%20temperature,%20the%20pancakes%20didn%E2%80%99t%20cook%20or%20rise%20very%20well.%20%20My%20second%20batch%20was%20a%20%E2%80%9Cstraight%E2%80%9D%20buttermilk%20pancake%20mix%20but,%20spreading%20the%20peanut%20butter%20on%20the%20warm%20pancakes%20added%20all%20of%20the%20peanut-y%20flavor%20I%20wanted.%20%20Also,%20there%20was%20no%20need%20to%20spread%20additional%20butter%20on%20the%20pancakes.%3C/p%3E%3Cp%3ECook%E2%80%99s%20Note:%3C/p%3E%3Cp%3EMy%20version%20of%20the%20traditional%20Southern%20Bananas%20Foster%20Recipe%20has%20no%20alcohol%20at%20all.%3C/p%3E%3Cp%3EI%20use%20sarsaparilla%20instead%20of%20rum%20to%20give%20the%20sauce%20a%20depth%20of%20flavor.%3C/p%3E%3Cp%3EI%20don%E2%80%99t%20like%20the%20taste%20of%20banana%20flavored%20liqueur%20at%20all.%20%20So,%20I%20smash%20up%20a%20couple%20of%20slices%20of%20the%20banana%20into%20the%20sauce%20and%20whisk%20well%20so%20that%20the%20bananas%20%E2%80%9Cdissolve%E2%80%9D%20into%20the%20sauce.%20%20I%20found%20that%20doing%20this%20gives%20the%20same%20banana%20flavor%20but,%20no%20yucky,%20fake%20banana%20after%20taste.%3C/p%3E%3Cp%3EI%20hope%20you%20have%20fun%20with%20this%20recipe.%20%20It%20makes%20a%20very%20nice%20breakfast%20or%20weekend%20brunch%20dish.%20%20You%20can%20even%20serve%20it%20for%20a%20%E2%80%9Cbreakfast%20for%20dinner%E2%80%9D%20night%20like%20we%20did.%3C/p%3E%3Cp%3EAnd%20don%E2%80%99t%20forget%20the%20King%E2%80%99s%20bacon!%3C/p%3E%3Cp%3E%E2%80%94posted%20by%20Sandy%3C/p%3E%3Cp%3E%E2%80%9CThe%20Elvis%E2%80%9D%20Peanut%20Butter%20and%20Bananas%20Foster%20Pancakes%20with%20Black%20Pepper%20Bacon%3C/p%3E%3Cp%3EAuthor:%20Sandy%20Hoopes%3C/p%3E%3Cp%3ERecipe%20type:%20Breakfast%3C/p%3E%3Cp%3ECuisine:%20American%3C/p%3E%3Cp%3EEnough%20batter%20to%20make%2012%20to%2016%20pancakes%20made%20from%20your%20favorite%20pancake%20recipe%20or%20pancake%20mix%3C/p%3E%3Cp%3EPrepare%20the%20batter%20for%20your%20favorite%20pancake%20recipe%20or%20mix%20and%20set%20aside.%3C/p%3E%3Cp%3EMelt%20the%20butter%20and%20brown%20sugar%20together%20in%20a%20large%20frying%20pan%20over%20medium%20heat%20and%20simmer%20until%20the%20brown%20sugar%20is%20completely%20dissolved,%20about%202%20minutes.%20Stir%20in%20the%20cinnamon%20and%20nutmeg.%3C/p%3E%3Cp%3ESmash%20a%20few%20slices%20of%20banana%20into%20the%20sugar%20mixture%20and%20stir%20dissolve%20the%20banana%20though%20out%20the%20sauce.%3C/p%3E%3Cp%3EPour%20the%20sarsaparilla%20into%20the%20pan%20and%20simmer%20over%20to%20reduce%20the%20sauce%20until%20it%20is%20thick%20enough%20to%20coat%20the%20back%20of%20a%20spoon.%3C/p%3E%3Cp%3ETurn%20off%20the%20heat%20and%20set%20the%20sauce%20aside%20until%20the%20pancakes%20are%20cooked.%3C/p%3E%3Cp%3ECook%20the%20pancakes%20in%20batches.%3C/p%3E%3Cp%3EWhen%20the%20pancakes%20are%20ready,%20return%20the%20brown%20sugar%20sauce%20to%20medium%20heat%20and%20add%20the%20remaining%20banana%20slices.%20Simmer%20until%20the%20bananas%20are%20softened%20and%20slightly%20browned.%3C/p%3E%3Cp%3EWarm%20the%20peanut%20butter%20in%20the%20microwave%20until%20soften%20enough%20to%20spread%20easily%20on%20the%20pancakes,%20about%2030%20to%2045%20seconds.%3C/
