Super moist coffee cake, flavored with peanut butter and bananas.

- 1/2 cup creamy peanut butter
- 1/2 cup butter, softened
- 1 1/4 cup white granulated sugar
- 2 eggs
- 1 1/2 cup mashed ripe bananas (about 3-4 medium bananas)
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- For the topping:
- 1/2 cup chopped walnuts
- 1/2 cup old fashioned rolled oats
- 3 Tbs light brown sugar
- 1 tsp ground cinnamon

- Preheat oven to 350 degrees F.
- In a large bowl cream together butter and sugar. Beat in vanilla, bananas, and peanut butter. Add eggs, one at a time, beating well after each addition.
- Sift together the flour, baking powder, baking soda, and salt. Gradually add the flour mixture to the creamed mixture, stirring only until just combined.
- Mix the topping ingredients together and add half to the batter.
- Pour batter into a greased 13x9 inch pan, and sprinkle the top with the remaining topping mixture.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack, then cut into slices.
