  • 3 lb hard ripe red plums pitted and cut into 1/2 inch chunks (about 2 quarts)
  • 1/2 tsp peeled crushed garlic
  • 1/2 lb onions peeled and finely minced (about 1 c.)
  • 1 c. rice wine vinegar (or possibly cider vinegar)
  • 1/2 tsp dry crushed red pepper
  • 1 tsp grnd coriander
  • 1/2 tsp grnd allspice
  • 2 1/2 c. sugar

  1. Place all the ingredients except the sugar into a wide 4quart saucepan and bring to a boil over medium heat stirring occasionally.
  2. Boil steadily about 30 min.
  3. Remove from heat.
  4. Put through food mill and return pureed fruit to pan.
  5. Add in sugar.
  6. Place over medium heat stirring constantly till mix again boils.
  7. Boil steadily for about 30 min stirring often to prevent sticking.
  8. Continue boiling about 15 min more stirring constantly.
  9. Sauce is done when about 1/2 tsp. of it holds its shape on a chilled saucer.
  10. Spoon at once into warm sterilized half pint jars and seal.
  11. Store at least a week to mellow.
  12. Makes about 5 1/2 c..
