- 2¼ lb (1 kg) grnd beef steak
- 4 finely minced shallots
- 4 egg yolks
- 3 tbsp mustard (preferably Ghent mustard)
- 2 tbsp minced flat-leaf parsley
- 2 tbsp minced chives
- 1 tbsp Worcester sauce
- 2 tbsp capers
- ¼ c. (25 cl) peanut oil
- Salt and pepper
Инструкции
- Put the mustard, Worcester sauce and egg yolks into a bowl
- Whisk together while slowly adding the oil. You need to drizzle in the oil very slowly while stirring constantly, as if you were making a mayonnaise
- Add in the grnd meat, shallots, parsley, chives and capers
- Add in salt and pepper to taste
- Mix together well and serve
