Steak Tartare Or Brussels Style Steak Tartare

Ингредиенты

  • 2¼ lb (1 kg) grnd beef steak
  • 4 finely minced shallots
  • 4 egg yolks
  • 3 tbsp mustard (preferably Ghent mustard)
  • 2 tbsp minced flat-leaf parsley
  • 2 tbsp minced chives
  • 1 tbsp Worcester sauce
  • 2 tbsp capers
  • ¼ c. (25 cl) peanut oil
  • Salt and pepper

Инструкции

  1. Put the mustard, Worcester sauce and egg yolks into a bowl
  2. Whisk together while slowly adding the oil. You need to drizzle in the oil very slowly while stirring constantly, as if you were making a mayonnaise
  3. Add in the grnd meat, shallots, parsley, chives and capers
  4. Add in salt and pepper to taste
  5. Mix together well and serve
