- 4 cups mâche or mâche rosettes
- 1 cup watercress
- ½ cup microgreens (I used Kale microgreens) or pea sprouts
- about 20 snow peas, trimmed
- 2 radishes, trimmed and very thinly sliced
- ¼ cup feta cheese
- For the vinaigrette:
- 1/3 cup walnut oil
- zest from 1 lemon
- 3 tablespoons lemon juice (about 1 ½ lemons)
- 1 heaping tablespoon minced shallot
- ½ teaspoon Dijon mustard
- Generous pinch of sugar
- Salt, to taste
- Freshly ground black pepper, to taste
